Ingredients
• 4 lean beef sirloin steaks (4 oz each)
• 1 tbsp olive oil or avocado oil
• 8 oz cremini mushrooms, sliced
• 1 small onion, thinly sliced
• 3 cloves garlic, minced
• 1 cup low-sodium beef broth
• ½ cup plain Greek yogurt
• 1 tsp fresh thyme or ½ tsp dried
• 1 tbsp whole wheat flour or cornstarch
• Salt & black pepper to taste
• Optional: fresh parsley for garnish
Instructions
• Season steaks lightly with salt and pepper; heat olive oil in a large skillet over medium-high heat.
• Sear steaks 3-4 minutes per side until browned; remove and set aside to rest.
• In the same skillet, sauté mushrooms and onion 5-6 minutes until softened and golden.
• Stir in garlic and thyme; cook 1 minute until fragrant, then sprinkle with flour and whisk to combine.
• Gradually pour in beef broth, stirring constantly; simmer 3-4 minutes until slightly thickened.
• Reduce heat to low; whisk in Greek yogurt until smooth and creamy. Return steaks to skillet, spoon gravy over top, and warm 2 minutes. Garnish with parsley and serve with cauliflower mash or whole-grain noodles!
