  • 4 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 large apple, julienned or thinly sliced
  • ½ cup dried cranberries
  • 1 carrot, shredded
  • 2 tbsp chopped walnuts (optional)

Light Dressing:

  • ½ cup plain Greek yogurt
  • 1 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  1. In a large bowl, combine green cabbage, red cabbage, apple, carrots, and cranberries.
  2. In a separate small bowl, whisk Greek yogurt, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until smooth.
  3. Pour dressing over the cabbage mixture.
  4. Toss well until evenly coated.
  5. Add walnuts if using for extra crunch.
  6. Chill for 10–15 minutes before serving for best flavor.
  7. Serve cold as a side dish or light meal.
