- 4 cups green cabbage, shredded
- 1 cup red cabbage, shredded
- 1 large apple, julienned or thinly sliced
- ½ cup dried cranberries
- 1 carrot, shredded
- 2 tbsp chopped walnuts (optional)
Light Dressing:
- ½ cup plain Greek yogurt
- 1 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 1 tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp black pepper
Instructions
- In a large bowl, combine green cabbage, red cabbage, apple, carrots, and cranberries.
- In a separate small bowl, whisk Greek yogurt, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until smooth.
- Pour dressing over the cabbage mixture.
- Toss well until evenly coated.
- Add walnuts if using for extra crunch.
- Chill for 10–15 minutes before serving for best flavor.
- Serve cold as a side dish or light meal.
