Beet Salad 🥗❤️✨ | Fresh, Earthy & Naturally Sweet Healthy Salad

Ingredients

  • 34 medium beets
  • 4 cups mixed greens (arugula, spinach, or lettuce)
  • 1/2 cup goat cheese or feta, crumbled
  • 1/4 cup walnuts or pecans, toasted
  • 1/2 small red onion, thinly sliced (optional)
  • 1 apple, thinly sliced (optional for sweetness)

Dressing:

 

  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Wrap beets in foil and roast for 40–50 minutes until tender.
  2. Let beets cool, then peel and slice into wedges or cubes.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper.
  4. In a large bowl or serving platter, arrange mixed greens.
  5. Top with sliced beets, cheese, nuts, onion, and apple if using.
  6. Drizzle with dressing just before serving.
  7. Toss lightly or serve layered.
