Ingredients

- 3–4 medium beets
- 4 cups mixed greens (arugula, spinach, or lettuce)
- 1/2 cup goat cheese or feta, crumbled
- 1/4 cup walnuts or pecans, toasted
- 1/2 small red onion, thinly sliced (optional)
- 1 apple, thinly sliced (optional for sweetness)
Dressing:
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C). Wrap beets in foil and roast for 40–50 minutes until tender.
- Let beets cool, then peel and slice into wedges or cubes.
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper.
- In a large bowl or serving platter, arrange mixed greens.
- Top with sliced beets, cheese, nuts, onion, and apple if using.
- Drizzle with dressing just before serving.
- Toss lightly or serve layered.
