- 1 red bell pepper, diced
- ½ red onion, sliced

Instructions
In a bowl, combine chicken, 2 tbsp oil, lime zest, lime juice, 1 minced jalapeño, half the garlic, cumin, smoked paprika, salt, and pepper. Marinate 10–15 minutes.
Preheat griddle to medium-high heat (about 400°F / 200°C). Oil surface lightly.
Add remaining oil to griddle. Sear corn, bell pepper, and onion 5–7 minutes, stirring occasionally, until charred and tender. Remove; set aside.
Spread chicken in single layer on griddle. Cook 6–8 minutes, flipping once, until golden and cooked through. In last 2 minutes, add remaining jalapeño and garlic; stir into chicken.
Return veggies to griddle; toss with chicken. Cook 1 more minute. Remove from heat; fold in optional avocado off-heat. Garnish with cilantro, lime, and cheese.
