Ingredients
2 cups cooked shredded chicken (grilled or rotisserie)
1 ripe avocado, mashed
½ cup Greek yogurt or ranch dressing
½ cup corn kernels (fresh or frozen)
¼ cup diced red onion
¼ cup chopped cilantro (optional)
1 tsp lime juice
4 large whole wheat or low-carb tortillas
Optional add-ons: lettuce, tomato, black beans, cheese
Instructions
In a bowl, mix mashed avocado and lime juice to prevent browning.
Add shredded chicken, Greek yogurt (or ranch), corn, red onion, and cilantro. Toss to combine.
Warm the tortillas in a skillet or microwave.
