  • 1Β½ lbs boneless, skinless chicken thighs or breasts, cut into 1β€³ pieces (you love high-protein!)
  • 1 tbsp avocado oil or sesame oil (high smoke point!)
  • Salt & black pepper to taste (use reduced-sodiumβ€”you love low-sodium!)

Sugar-free teriyaki sauce (the star!):

  • ΒΌ cup coconut aminos or low-sodium tamari (you love low-sodiumβ€”memory #19!)
  • 2 tbsp low-sodium chicken broth
  • 1 tbsp sugar-free honey or monk fruit syrup (you love blood sugar friendly!)
  • 1 tbsp rice vinegar or fresh lime juice (you love citrus brightness!)
  • 1 tsp toasted sesame oil
  • 4–6 garlic cloves, minced (you love garlic!)
  • 1 tbsp fresh ginger, grated
  • Β½ tsp black pepper
  • Optional: ¼–½ tsp red pepper flakes (you love spicy!)
  • Optional thickener: Β½ tsp xanthan gum or arrowroot + 1 tbsp cold water

Finish & aromatics:

  • 1–2 tsp cold butter or coconut oil (for extra-glossy finishβ€”you love buttery richness!)
  • 1 tsp toasted sesame seeds
  • 2–3 green onions, sliced (white + green parts separated)
  • Fresh cilantro or parsley
  • Lime wedges (you love citrus!)

Serving bases (choose your favorite!):

  • πŸ₯¬ Low-carb/keto: Cauliflower rice, zucchini noodles, or shredded cabbage (you love low-carb!)
  • 🍚 Gluten-free: Jasmine rice, quinoa, or GF soba noodles
  • πŸ₯— Light: Mixed greens or Asian slaw for a protein-packed salad

Instructions

1. Prep chicken:
Pat chicken pieces very dry with paper towels (key for golden sear!). Season lightly with salt and pepper.
2. Sear chicken:
Heat oil in large skillet or wok over medium-high heat until shimmering.
Add chicken in a single layer (work in batches if needed).
Cook 5–6 minutes, stirring occasionally, until golden and cooked through (165Β°F internal temp). Remove; set aside.
3. Make teriyaki sauce:
Reduce heat to medium. Add garlic and ginger to skillet; cook 30 seconds until fragrant (don’t brown!).
Pour in coconut aminos, broth, sugar-free honey, vinegar, sesame oil, black pepper, and optional red pepper flakes.
Bring to gentle simmer; cook 2–3 minutes to reduce slightly and meld flavors.
4. Thicken & combine:
β†’ If using thickener: Whisk xanthan gum/arrowroot with cold water; stir into sauce and simmer 1 minute until glossy.
Return chicken to skillet; toss gently to coat in sauce. Cook 1–2 minutes more to glaze and warm through.
5. Finish & serve:
Remove from heat; stir in cold butter for luxurious sheen.
Garnish with sesame seeds, green onions, cilantro, and lime wedges. Serve over your chosen base.
πŸ’‘ Pro Tips for Perfection:
βœ… Dry chicken = golden searβ€”moisture is the enemy of browning!
βœ… Don’t overcook ginger/garlicβ€”30 seconds max prevents bitter, burnt flavor.
βœ… Low-sodium mastery (you love this!):
β†’ Coconut aminos = 65% less sodium than soy sauce
β†’ Boost umami with extra garlic, ginger, black pepper, and lime zest
βœ… Blood sugar friendly (you love this!):
β†’ Sugar-free honey + no added sugars = zero glycemic impact
β†’ Net carbs: 6g per serving
βœ… Low-carb/keto option (you love this!):
β†’ Already compliant with cauliflower rice! <7g net carbs/serving
β†’ High-protein: 34g+ per serving
βœ… Make ahead:
β†’ Sauce keeps 5 days refrigerated
β†’ Cooked chicken keeps 4 days refrigerated or 3 months frozen
β†’ Reheat gently with splash of broth to restore gloss

Flavor Variation Ideas (you love unique combos!):
β†’ Garlic-Pepper Steak Teriyaki: Swap chicken for thinly sliced ribeye + extra black pepper (you love rich cuts!)
β†’ Shrimp-Ginger Teriyaki: Use shrimp + add 1 tsp extra fresh ginger for bright, coastal vibes (memory #17!)
β†’ Creamy Sesame Teriyaki: Stir in 2 tbsp heavy cream or coconut milk at the end for rich, silky sauce (memory #11!)
β†’ Spicy Szechuan Teriyaki: Add 1 tsp sugar-free chili garlic sauce + extra red pepper flakes for fiery kick
β†’ Pineapple-Teriyaki: Add Β½ cup fresh pineapple chunks for sweet-tropical depth (memory #8!)
β†’ Peanut-Lime Teriyaki: Swap sesame oil for sugar-free peanut butter + extra lime zest (memory #14!)

Air Fryer Option (hands-off crisp!):
β†’ Toss prepped chicken with 1 tbsp oil and seasonings.
β†’ Air fry at 400Β°F (200Β°C) for 10–12 minutes, shaking halfway, until golden and 165Β°F internal temp.
β†’ Make sauce separately; toss chicken in warm glaze before serving.
Sheet Pan Option (easy cleanup!):
β†’ Toss chicken + veggies (broccoli, bell peppers) with oil and seasonings.
β†’ Roast at 425Β°F (220Β°C) for 18–20 minutes until tender.
β†’ Make sauce on stovetop; toss everything together before serving.

Serving Ideas
β†’ Low-carb dinner: Over cauliflower rice with garlic green beans
β†’ Classic comfort: With jasmine rice and a crisp cucumber salad
β†’ Light & fresh: Over mixed greens for a protein-packed teriyaki salad
β†’ Meal prep: Portion into containers with veggies for grab-and-go lunches
β†’ Date night: With sparkling water and lime wedges for restaurant vibes

Storage & Reheating
β†’ Fridge life: 4 days (store sauce and chicken together for best flavor)
β†’ Reheat: Skillet over medium-low heat 2–3 minutes with splash of brothβ€”avoid microwave (chicken toughens!)
