For the Sweet Potatoes:
- 2 medium sweet potatoes, peeled and diced
- 2 tbsp olive oil
- 1 tsp chipotle chili powder
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
For the Tacos:
- 8 small corn or flour tortillas
- 2 cups shredded red cabbage
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1/4 cup crumbled feta or cotija cheese (optional)
- Lime wedges for serving
Chipotle Lime Sauce:

- 1/2 cup Greek yogurt or sour cream
- 1 tbsp lime juice
- 1 tsp chipotle chili powder
- 1/4 tsp garlic powder
Instructions
- Preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper.
- Toss sweet potatoes with olive oil, chipotle powder, paprika, cumin, garlic powder, and salt.
- Spread in a single layer on the baking sheet.
- Roast for 25โ30 minutes, stirring halfway through, until tender and lightly caramelized.
- While the sweet potatoes roast, whisk together all sauce ingredients in a small bowl.
- Warm tortillas in a skillet or microwave.
- Fill each tortilla with roasted sweet potatoes and shredded cabbage.
- Top with avocado slices, cilantro, and cheese if using.
- Drizzle with chipotle lime sauce.
- Serve with fresh lime wedges.
