For the Sweet Potatoes:

  • 2 medium sweet potatoes, peeled and diced
  • 2 tbsp olive oil
  • 1 tsp chipotle chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt

For the Tacos:

  • 8 small corn or flour tortillas
  • 2 cups shredded red cabbage
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled feta or cotija cheese (optional)
  • Lime wedges for serving

Chipotle Lime Sauce:

  • 1/2 cup Greek yogurt or sour cream
  • 1 tbsp lime juice
  • 1 tsp chipotle chili powder
  • 1/4 tsp garlic powder

Instructions

  1. Preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper.
  2. Toss sweet potatoes with olive oil, chipotle powder, paprika, cumin, garlic powder, and salt.
  3. Spread in a single layer on the baking sheet.
  4. Roast for 25โ€“30 minutes, stirring halfway through, until tender and lightly caramelized.
  5. While the sweet potatoes roast, whisk together all sauce ingredients in a small bowl.
  6. Warm tortillas in a skillet or microwave.
  7. Fill each tortilla with roasted sweet potatoes and shredded cabbage.
  8. Top with avocado slices, cilantro, and cheese if using.
  9. Drizzle with chipotle lime sauce.
  10. Serve with fresh lime wedges.
