- 1 lb boneless, skinless chicken breasts, diced
- 2 tbsp olive oil
- Juice of 2 limes
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp paprika
- ½ tsp sea salt
- ½ tsp black pepper
- 2 cups cooked brown rice
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels
- 1 avocado, diced
- ¼ cup chopped fresh cilantro
- 1 cup shredded romaine lettuce
Instructions
- In a bowl, combine olive oil, lime juice, garlic, cumin, chili powder, paprika, salt, and pepper.
- Add the chicken and marinate for 15–20 minutes.
- Heat a large skillet over medium-high heat and cook the chicken for 6–8 minutes, stirring occasionally, until fully cooked.
- Divide the cooked brown rice evenly among four serving bowls.
- Top each bowl with the cooked chicken, cherry tomatoes, corn, avocado, and shredded lettuce.
- Sprinkle with fresh cilantro and an extra squeeze of lime juice if desired.
- Serve immediately and enjoy.
