Potato & egg base:

  • 3 lbs Yukon Gold or red potatoes, peeled and cubed (or swap for cauliflower—you love low-carb!)
  • 6 large eggs, hard-boiled, chopped

Classic Southern dressing:

  • ¾ cup mayonnaise or avocado oil mayo (you love creamy textures!)
  • 2 tbsp yellow mustard
  • 1 tbsp apple cider vinegar or dill pickle juice (you love tangy brightness!)
  • ¼ cup finely diced dill pickles or relish
  • ¼ cup finely diced red onion (soak in cold water 10 min to mellow bite)
  • 2 celery stalks, finely diced
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & black pepper to taste (use reduced-sodium—you love low-sodium!)

Garnish:

  • Extra paprika
  • Chopped fresh parsley or dill

Instructions

1. Cook potatoes:
Place potatoes in pot; cover with salted water. Bring to boil. Cook 10–12 minutes until fork-tender. Drain; rinse under cold water.
2. Mix dressing:
In large bowl, combine mayonnaise, mustard, vinegar (or pickle juice), pickles, drained red onion, celery, garlic powder, paprika, salt, and pepper.
3. Assemble salad:
Add cooled potatoes and chopped eggs to dressing. Gently fold until coated.
4. Chill & serve:
Refrigerate at least 1 hour (or up to 24 hours). Garnish with paprika, herbs, and optional bacon before serving.
