For the Salad:

  • 12 oz rotini pasta
  • 8 slices bacon, cooked and crumbled
  • 1 cup sweet corn kernels
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/4 cup red onion, finely diced
  • 2 tbsp chopped fresh cilantro (optional)

For the Dressing:

  • 1/2 cup ranch dressing
  • 1/4 cup barbecue sauce
  • 1 tbsp lime juice
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder

Instructions

  1. Cook pasta according to package directions until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine the cooled pasta, bacon, corn, black beans, tomatoes, cheddar cheese, red onion, and cilantro.
  3. In a small bowl, whisk together ranch dressing, barbecue sauce, lime juice, chili powder, and garlic powder.
  4. Pour the dressing over the pasta mixture and toss until evenly coated.
  5. Cover and refrigerate for at least 30 minutes before serving.
  6. Garnish with extra bacon, cheese, or cilantro if desired.
  7. Serve chilled.
