For the Salad:
- 12 oz rotini pasta
- 8 slices bacon, cooked and crumbled
- 1 cup sweet corn kernels
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1/4 cup red onion, finely diced
- 2 tbsp chopped fresh cilantro (optional)
For the Dressing:

- 1/2 cup ranch dressing
- 1/4 cup barbecue sauce
- 1 tbsp lime juice
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
Instructions
- Cook pasta according to package directions until al dente. Drain and rinse under cold water.
- In a large bowl, combine the cooled pasta, bacon, corn, black beans, tomatoes, cheddar cheese, red onion, and cilantro.
- In a small bowl, whisk together ranch dressing, barbecue sauce, lime juice, chili powder, and garlic powder.
- Pour the dressing over the pasta mixture and toss until evenly coated.
- Cover and refrigerate for at least 30 minutes before serving.
- Garnish with extra bacon, cheese, or cilantro if desired.
- Serve chilled.
