Ingredients

• 1 lb lean chicken breast, cooked and shredded
• 2 cans (15 oz each) cannellini beans, rinsed
• 1 can (4 oz) mild green chiles, diced
• 1 small onion, diced
• 3 cloves garlic, minced
• 4 cups low-sodium chicken broth
• 1 tsp ground cumin
• ½ tsp dried oregano
• ½ cup plain Greek yogurt
• 1 tbsp fresh lime juice
• Salt & pepper to taste
• Optional toppings: avocado, cilantro, jalapeños


Instructions

• In a large pot, sauté onion and garlic over medium heat until fragrant, about 3 minutes.
• Add chicken broth, shredded chicken, cannellini beans, green chiles, cumin, and oregano; bring to a gentle boil.
• Reduce heat and simmer uncovered 15-20 minutes, stirring occasionally, to let flavors meld.
• Remove from heat; stir in Greek yogurt and lime juice until creamy and smooth.
• Season with salt and pepper to taste; ladle into bowls and top with fresh avocado, cilantro, or jalapeños.
