Chicken & base:

  • 2 lbs boneless, skinless chicken breasts or thighs (you love high-protein!)
  • 8 oz (1 block) full-fat cream cheese, softened (you love cream cheese—memory #11!)
  • 1 cup shredded reduced-sodium cheddar or Mexican blend (you love low-sodium!)
  • 6 slices bacon, cooked crisp and crumbled (you love bacon richness!)

Sugar-free ranch seasoning (makes extra—store for next time!):

  • 1 tbsp dried parsley
  • 1 tsp garlic powder (you love garlic!)
  • 1 tsp onion powder
  • 1 tsp dried dill
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ¼ tsp salt (use reduced-sodium—you love low-sodium!)
  • Optional: ¼ tsp red pepper flakes (you love spicy!)

Creamy binder:

  • ½ cup low-sodium chicken broth (you love low-sodium!)

Instructions

1. Cook chicken (choose your method!):
Stovetop (fastest!):
→ Cut chicken into 1″ cubes. Season with half the ranch seasoning.
→ Heat large skillet over medium-high heat; cook chicken 6–8 minutes until golden. Remove; set aside.
Slow Cooker (hands-off!):
→ Place whole chicken breasts in slow cooker. Sprinkle with ranch seasoning + broth.
→ Cook on LOW 4–5 hours or HIGH 2–3 hours until tender. Shred with forks.
Instant Pot (quick & tender!):
→ Add chicken, broth, and ranch seasoning to pot.
→ Cook on High Pressure 10 minutes; natural release 5 minutes. Shred.
2. Make creamy sauce:
Reduce heat to low (or return shredded chicken to slow cooker/Instant Pot).
Add softened cream cheese, broth, and optional sour cream; stir until smooth and melted.
3. Combine & melt cheese:
Return chicken to skillet (if using stovetop). Stir in shredded cheese and half the crumbled bacon.
Cook 2–3 minutes until cheese is melted and everything is coated in creamy sauce.
4. Serve:
Spoon over your chosen base. Top with remaining bacon, fresh chives, and optional toppings.
