- 8 oz whole wheat penne pasta
- 2 cups cooked chicken breast, shredded
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- ½ cup plain Greek yogurt
- ½ cup light cream cheese
- ¾ cup shredded cheddar cheese
- ½ tsp paprika
- ½ tsp black pepper
- ½ tsp Italian seasoning
- 2 tbsp chopped green onions
- 2 tbsp turkey bacon bits (optional)
Instructions
- Cook penne pasta according to package directions; drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Sauté garlic for 30 seconds until fragrant.
- Add chicken broth, cream cheese, and Greek yogurt; stir until smooth.
- Mix in cheddar cheese, paprika, pepper, and Italian seasoning.
- Add shredded chicken and stir until coated in sauce.
- Fold in cooked penne and mix well.
- Simmer for 2–3 minutes until creamy and heated through.
- Top with green onions and turkey bacon bits if using.
- Serve warm.
