Cranberry Delight Grilled Sandwich: Sweet, Savory, and Perfectly Golden

Ingredients

• Cranberry Compote: 1 cup fresh or frozen cranberries, 2 tbsp pure maple syrup or honey, 1 tbsp fresh orange juice + 1 tsp zest, 1 tbsp water, pinch of cinnamon
• Greek Yogurt Spread: ¼ cup plain Greek yogurt, 1 tbsp cream cheese or goat cheese softened, 1 tsp honey or maple syrup, pinch of sea salt
• Sandwich Assembly: 4 slices whole-grain, sourdough, or gluten-free bread, 4 oz brie, goat cheese, or reduced-fat cheddar sliced, 2 cups fresh arugula or baby spinach, 2 tbsp chopped walnuts or pecans (optional)
• For Grilling: 1 tbsp light butter or coconut oil, or olive oil spray


Instructions

• For cranberry compote: In a small saucepan, combine cranberries, maple syrup, orange juice, orange zest, water, and cinnamon. Cook over medium heat 8-10 minutes, stirring occasionally, until cranberries burst and mixture thickens to a jammy consistency. Remove from heat and cool slightly.
• For Greek yogurt spread: In a small bowl, whisk Greek yogurt, cream cheese, honey, and salt until smooth and creamy. Set aside.
• Spread Greek yogurt mixture on one side of each bread slice. On two slices, layer cheese, a generous spoonful of cranberry compote, arugula, and optional walnuts. Top with remaining bread slices, yogurt-side down.
• Heat a large skillet or griddle over medium heat. Lightly butter or spray the outside of each sandwich.
• Grill sandwiches 3-4 minutes per side, pressing gently with a spatula, until bread is golden brown and crispy and cheese is melted.
• Remove from heat, let rest 1-2 minutes, then slice diagonally. Serve warm for the coziest, most festive grilled sandwich experience!
