- 2 lbs potatoes, diced
- 2 cups cooked chicken breast, cubed
- 6 slices bacon, cooked and crumbled
- 1 cup sour cream
- 1/2 cup milk
- 1 1/2 cups cheddar cheese, shredded
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 green onions, sliced
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Place diced potatoes in a pot of boiling water and cook for 8–10 minutes until slightly tender. Drain.
- In a large bowl, combine sour cream, milk, garlic powder, onion powder, paprika, salt, and pepper.
- Add potatoes, chicken, half of the bacon, and 1 cup of cheddar cheese. Toss to coat.
- Transfer the mixture to the prepared baking dish.
- Sprinkle the remaining cheese and bacon over the top.
- Bake for 25–30 minutes, or until hot, bubbly, and golden.
- Garnish with sliced green onions before serving.
