  • 2 lbs potatoes, diced
  • 2 cups cooked chicken breast, cubed
  • 6 slices bacon, cooked and crumbled
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 1/2 cups cheddar cheese, shredded
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Place diced potatoes in a pot of boiling water and cook for 8–10 minutes until slightly tender. Drain.
  3. In a large bowl, combine sour cream, milk, garlic powder, onion powder, paprika, salt, and pepper.
  4. Add potatoes, chicken, half of the bacon, and 1 cup of cheddar cheese. Toss to coat.
  5. Transfer the mixture to the prepared baking dish.
  6. Sprinkle the remaining cheese and bacon over the top.
  7. Bake for 25–30 minutes, or until hot, bubbly, and golden.
  8. Garnish with sliced green onions before serving.
