- 1 lb cooked shrimp, peeled and deveined
- 2 large cucumbers, thinly sliced
- ½ small red onion, thinly sliced
- ¼ cup chopped fresh dill
- 2 tbsp chopped fresh parsley
Creamy Dressing:
- ½ cup plain Greek yogurt
- 2 tbsp light mayonnaise
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- ¼ tsp sea salt
- ¼ tsp black pepper
Instructions
- In a large bowl, combine the shrimp, cucumbers, red onion, dill, and parsley.
- In a small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, garlic, salt, and pepper until smooth.
- Pour the dressing over the shrimp mixture.
- Gently toss until everything is evenly coated.
- Cover and refrigerate for 20–30 minutes to allow the flavors to blend.
- Garnish with extra fresh dill before serving if desired.
- Serve chilled as a light lunch or refreshing dinner.
