  • 1 lb cooked shrimp, peeled and deveined
  • 2 large cucumbers, thinly sliced
  • ½ small red onion, thinly sliced
  • ¼ cup chopped fresh dill
  • 2 tbsp chopped fresh parsley

Creamy Dressing:

  • ½ cup plain Greek yogurt
  • 2 tbsp light mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • ¼ tsp sea salt
  • ¼ tsp black pepper

Instructions

  1. In a large bowl, combine the shrimp, cucumbers, red onion, dill, and parsley.
  2. In a small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, garlic, salt, and pepper until smooth.
  3. Pour the dressing over the shrimp mixture.
  4. Gently toss until everything is evenly coated.
  5. Cover and refrigerate for 20–30 minutes to allow the flavors to blend.
  6. Garnish with extra fresh dill before serving if desired.
  7. Serve chilled as a light lunch or refreshing dinner.
