Ingredients
- 🦐 1 lb sea scallops
- 🧈 2 tbsp butter
- 🫒 1 tbsp olive oil
- 🧄 4 cloves garlic, minced
- 🥛 1 cup heavy cream
- 🧀 ½ cup grated Parmesan cheese
- 🍅 ½ cup sun-dried tomatoes, chopped
- 🌿 2 cups fresh spinach
- 🧂 Salt & black pepper, to taste
- 🌿 1 tsp Italian seasoning
- 🌱 Fresh parsley, for garnish
Instructions
- 🧂 Pat the scallops dry and season with salt and pepper.
- 🧈 Heat the butter and olive oil in a skillet. Sear the scallops for 2–3 minutes per side until golden. Remove and set aside.
- 🧄 Sauté the garlic for 30 seconds, then stir in the heavy cream, Parmesan, and Italian seasoning.
- 🍅 Add the sun-dried tomatoes and spinach. Cook until the spinach wilts.
- 🦐 Return the scallops to the skillet and simmer for 2 minutes to coat in the creamy sauce.
- 🌱 Garnish with fresh parsley and serve over pasta, rice, or mashed potatoes.
