  • Sugar-free taco seasoning (makes extra—store for next time!):
    • 1 tbsp chili powder
    • 1½ tsp cumin
    • 1 tsp garlic powder (you love garlic!)
    • 1 tsp onion powder
    • ½ tsp smoked paprika
    • ½ tsp black pepper
    • ¼ tsp cayenne or red pepper flakes (optional—you love spicy!)
    • Salt to taste (use reduced-sodium—you love low-sodium!)
  • 23 tbsp water or low-sodium beef broth (to loosen)

Crispy shell options (choose your favorite!):

  • 🌮 Gluten-free: 8 small corn tortillas + oil for frying (you love GF!)
  • 🥬 Low-carb/keto: Almond flour taco shells, cheese crisps, or large lettuce cups
  • 🛒 Shortcut: Store-bought GF corn taco shells (check label for sugar-free)

Creamy sugar-free sauce (the secret!):

  • ¼ cup sugar-free sour cream or plain Greek yogurt (you love creamy textures!)
  • 1 tbsp fresh lime juice (you love citrus brightness!)
  • 1 tsp garlic powder or 1 small garlic clove, minced
  • ½ tsp cumin
  • Pinch of salt & pepper

Fresh toppings (mix & match!):

  • Shredded reduced-sodium cheddar or Mexican blend (you love low-sodium!)
  • Shredded lettuce or cabbage
  • Diced tomatoes or sugar-free pico de gallo
  • Sliced avocado or guacamole (you love creamy textures!)
  • Thinly sliced red onion (soak in cold water 5 min to mellow bite)
  • Fresh cilantro or parsley
  • Lime wedges
  • Optional: Sugar-free jalapeños, hot sauce, or pickled red onions

Instructions

1. Brown the beef:
Heat oil in large skillet over medium-high heat. Add ground beef; cook 6–8 minutes, breaking into crumbles, until browned. Drain excess fat.
2. Season:
Stir in taco seasoning and water/broth. Simmer 2–3 minutes until slightly thickened and fragrant. Keep warm.
3. Make creamy sauce:
In a small bowl, whisk together sour cream/yogurt, lime juice, garlic, cumin, salt, and pepper until smooth.
4. Crisp the shells:
For corn tortillas: Brush both sides lightly with oil. Heat in dry skillet over medium heat 1–2 minutes per side until golden and crisp. Fold into taco shape while warm.
For store-bought shells: Warm per package directions.
For low-carb: Use pre-made almond flour shells, cheese crisps, or lettuce cups.
5. Assemble tacos:
Spread 1 tsp creamy sauce inside each shell.
Fill with seasoned beef, then layer with cheese and your favorite fresh toppings.
Drizzle with extra sauce if desired.
6. Serve:
Serve immediately with lime wedges and optional hot sauce.
