Crispy Crunchy Parmesan Potatoes: Golden, Cheesy, and Absolutely Addictive

  • 1 1/2 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the potatoes with olive oil.
  3. Add Parmesan cheese, garlic powder, paprika, oregano, salt, and pepper. Toss until evenly coated.
  4. Arrange potatoes cut-side down on the prepared baking sheet.
  5. Roast for 30–35 minutes, or until golden brown and crispy.
  6. Remove from the oven and let cool for 2–3 minutes.
  7. Garnish with fresh parsley before serving.
