- 1 1/2 lbs baby potatoes, halved
- 2 tbsp olive oil
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the potatoes with olive oil.
- Add Parmesan cheese, garlic powder, paprika, oregano, salt, and pepper. Toss until evenly coated.
- Arrange potatoes cut-side down on the prepared baking sheet.
- Roast for 30–35 minutes, or until golden brown and crispy.
- Remove from the oven and let cool for 2–3 minutes.
- Garnish with fresh parsley before serving.
