  • 3 cups brown rice cereal
  • 2 cups mini marshmallows
  • 2 tbsp natural almond butter
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • Pinch of sea salt

Instructions

  1. Line an 8×8-inch baking pan with parchment paper.
  2. In a saucepan over low heat, melt the coconut oil, almond butter, maple syrup, and mini marshmallows, stirring until smooth.
  3. Remove from the heat and stir in the vanilla extract and sea salt.
  4. Fold in the brown rice cereal until evenly coated.
  5. Press the mixture firmly into the prepared pan using a spatula or lightly greased hands.
  6. Let cool at room temperature for 30 minutes, or refrigerate for 20 minutes until set.
  7. Cut into bite-sized squares and serve.
