- 3 cups brown rice cereal
- 2 cups mini marshmallows
- 2 tbsp natural almond butter
- 2 tbsp coconut oil
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Pinch of sea salt
Instructions
- Line an 8×8-inch baking pan with parchment paper.
- In a saucepan over low heat, melt the coconut oil, almond butter, maple syrup, and mini marshmallows, stirring until smooth.
- Remove from the heat and stir in the vanilla extract and sea salt.
- Fold in the brown rice cereal until evenly coated.
- Press the mixture firmly into the prepared pan using a spatula or lightly greased hands.
- Let cool at room temperature for 30 minutes, or refrigerate for 20 minutes until set.
- Cut into bite-sized squares and serve.
