Ingredients

  • 🌮 4 large flour tortillas
  • 🎃 1 cup pumpkin purée
  • 🧀 2 cups shredded cheddar or Monterey Jack cheese
  • 🍂 1 tsp pumpkin pie spice
  • 🌿 ½ tsp garlic powder
  • 🧈 2 tbsp butter
  • 🌱 Fresh cilantro, chopped (optional)

 

  • 🥣 Sour cream or salsa, for serving

Instructions

  1. 🥣 Mix the pumpkin purée with the pumpkin pie spice and garlic powder.
  2. 🌮 Spread the pumpkin mixture over half of each tortilla, then sprinkle generously with cheese.
  3. 🌿 Add cilantro if desired, then fold the tortillas in half.
  4. 🧈 Melt butter in a skillet over medium heat.
  5. 🍳 Cook each quesadilla for 2–3 minutes per side, until golden brown and the cheese is melted.
  6. 🔪 Slice into wedges and serve warm with sour cream or salsa.
