For the Bread:
- 1½ cups whole wheat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp ginger
- ¼ tsp salt
- 1 cup pumpkin puree
- ⅓ cup maple syrup
- ¼ cup coconut oil, melted
- 2 large eggs
- 1 tsp vanilla extract
For the Streusel:
- ¼ cup rolled oats
- 2 tbsp whole wheat flour
- 2 tbsp coconut sugar
- 1 tsp cinnamon
- 1 tbsp coconut oil, melted
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, and salt.
- In another bowl, combine pumpkin puree, maple syrup, coconut oil, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Pour the batter into the prepared loaf pan.
- In a small bowl, mix all streusel ingredients until crumbly.
- Sprinkle the streusel evenly over the batter.
- Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and enjoy.
