Ingredients

  • 🥒 2 cups grated zucchini
  • 🌾 2 cups whole wheat flour
  • 🥚 2 large eggs
  • 🍁 ½ cup maple syrup
  • 🥥 ¼ cup melted coconut oil
  • 🌿 1 tsp vanilla extract
  • 🥄 2 tsp baking powder
  • 🍂 1 tsp ground cinnamon
  • 🧂 ¼ tsp salt

 

  • 🌰 ½ cup chopped walnuts (optional)

Instructions

  1. 🔥 Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. 🥣 Mix the eggs, maple syrup, coconut oil, and vanilla until smooth.
  3. 🥒 Stir in the grated zucchini.
  4. 🌾 Add the flour, baking powder, cinnamon, and salt. Mix until just combined.
  5. 🌰 Fold in the walnuts, if using.
  6. 🍰 Pour the batter into the prepared pan and bake for 30–35 minutes, until a toothpick comes out clean.
  7. ❄️ Let cool before slicing and serving.
