- 4 large ripe tomatoes, sliced or cut into wedges
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped

Instructions
- Arrange the sliced tomatoes in a shallow serving dish or bowl.
- In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, garlic, oregano, basil, salt, and pepper.
- Pour the marinade evenly over the tomatoes.
- Sprinkle with parsley and red onion if using.
- Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
- Gently toss before serving.
- Serve chilled or at room temperature.
