Ingredients

  • 4 large ripe tomatoes, sliced or cut into wedges
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

  • 2 tbsp thinly sliced red onion (optional)

Instructions

  1. Arrange the sliced tomatoes in a shallow serving dish or bowl.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, garlic, oregano, basil, salt, and pepper.
  3. Pour the marinade evenly over the tomatoes.
  4. Sprinkle with parsley and red onion if using.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
  6. Gently toss before serving.
  7. Serve chilled or at room temperature.
