For the Beef Chops:

  • 4 beef loin chops (about 6 oz each)
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Cheesy Potato Bake:

  • 2 lbs potatoes, thinly sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup milk
  • 2 tbsp unsalted butter, melted
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Arrange sliced potatoes in the baking dish.
  3. In a bowl, whisk together milk, melted butter, garlic powder, onion powder, salt, and pepper.
  4. Pour the mixture over the potatoes and sprinkle with cheddar and mozzarella cheese.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil and bake for an additional 15 minutes, until golden and bubbly.
  7. Meanwhile, season beef chops with thyme, rosemary, salt, and pepper.
  8. Melt butter in a large skillet over medium-high heat.
  9. Add beef chops and cook for 4–5 minutes per side, or until desired doneness.
  10. Add minced garlic during the last minute of cooking and spoon the garlic butter over the chops.
  11. Let the beef rest for 5 minutes before serving.
  12. Serve hot with the cheesy potato bake.
