For the Beef Chops:
- 4 beef loin chops (about 6 oz each)
- 2 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/2 tsp black pepper
For the Cheesy Potato Bake:
- 2 lbs potatoes, thinly sliced
- 1 1/2 cups shredded cheddar cheese
- 1 cup mozzarella cheese, shredded
- 1 cup milk
- 2 tbsp unsalted butter, melted
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Arrange sliced potatoes in the baking dish.
- In a bowl, whisk together milk, melted butter, garlic powder, onion powder, salt, and pepper.
- Pour the mixture over the potatoes and sprinkle with cheddar and mozzarella cheese.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15 minutes, until golden and bubbly.
- Meanwhile, season beef chops with thyme, rosemary, salt, and pepper.
- Melt butter in a large skillet over medium-high heat.
- Add beef chops and cook for 4–5 minutes per side, or until desired doneness.
- Add minced garlic during the last minute of cooking and spoon the garlic butter over the chops.
- Let the beef rest for 5 minutes before serving.
- Serve hot with the cheesy potato bake.
