  • lbs sirloin or ribeye steak, cut into 1.5” cubes
  • lbs baby potatoes, halved (or Yukon Gold, cubed)
  • 2 tbsp olive oil
  • Salt & black pepper

Garlic herb butter (you love buttery richness!):

  • 6 tbsp unsalted butter, softened
  • 6 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)
  • Zest of 1 lemon (brightens richness—you love citrus!)
  • Optional: 2 tbsp grated Parmesan

Veggies (optional but recommended):

  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • ½ red onion, sliced

Instructions

1. Prep packets:

  1. Preheat oven to 425°F (220°C) or grill to medium-high heat.
  2. Cut four 18″ sheets of heavy-duty foil.

2. Assemble:

  1. Divide potatoes among foil sheets; drizzle with 1 tbsp olive oil, salt, and pepper.
  2. Top with steak, veggies (if using), and dollops of garlic herb butter.
  3. Fold foil into sealed packets (leave room for steam).

3. Cook:

  • Oven: Bake 25–30 minutes until potatoes are tender and steak is cooked to desired doneness.
  • Grill: Cook 20–25 minutes, flipping halfway.
  • Campfire: Place on hot coals; cook 25–30 minutes, rotating occasionally.

4. Serve:
