Instructions

1. Prep broccoli:
Steam or microwave chopped broccoli 3–4 minutes until bright green and tender. Drain well, then squeeze out excess moisture using a clean towel (key for crispness!).
2. Mix batter:
In a bowl, combine drained broccoli, eggs, Parmesan, almond flour, garlic, onion powder, pepper, and salt. Stir in optional add-ins if using.
3. Shape bites:
Scoop 1-tbsp portions; roll into balls or flatten slightly into patties. Place on parchment-lined baking sheet.
