Instructions

1. Sear beef:
Pat beef very dry; season with salt and pepper.
Heat 1 tbsp oil in large skillet over high heat. Sear beef in batches 1–2 minutes per side until browned but still pink inside. Remove immediately; set aside.
2. Sauté mushrooms & onions:
In same skillet, add butter and remaining oil. Add onions; cook 3 minutes. Add mushrooms; cook 6–8 minutes until deeply golden. Stir in garlic; cook 30 seconds.
3. Build sauce:

4. Finish:
