Green Beans with Gremolata: Bright, Fresh, and Flavor-Packed Side Dish

Ingredients

• 1 lb fresh green beans, trimmed
• 2 tbsp olive oil or avocado oil
• 3 cloves garlic, minced
• ¼ cup fresh parsley, finely chopped
• 2 tbsp fresh lemon zest + 1 tbsp juice
• 1 tbsp fresh mint or basil, chopped (optional)
• Pinch of red pepper flakes
• Salt & black pepper to taste
• Optional: 2 tbsp toasted pine nuts or slivered almonds


Instructions

• Bring a large pot of salted water to a boil; add green beans and blanch 3-4 minutes until bright green and crisp-tender.
• Drain immediately and rinse under cold water to lock in color; pat dry gently.
• In a small bowl, mix minced garlic, parsley, lemon zest, lemon juice, mint, and red pepper flakes to make the gremolata.
• Heat olive oil in a large skillet over medium heat; add green beans and sauté 2-3 minutes until warmed through.
• Remove from heat; toss with fresh gremolata and optional toasted nuts. Season with salt and pepper, then serve immediately!
