Grilled Mozzarella Sandwich 🧀🥪🔥

  • Author: WAFA LI

Ingredients

Scale
(Serves 2)

Sandwich:

  • 4 slices sourdough, whole grain, or gluten-free bread (you love GF—you’ll want certified!)
  • 8 oz fresh mozzarella, sliced or torn (use part-skim for lower fat—you love balance!)
  • 1 large ripe tomato, sliced
  • ¼ cup fresh basil leaves
  • 2 tbsp butter or olive oil (you love buttery richness!)
  • Optional: Pinch of garlic powder or red pepper flakes (you love bold flavor!)

For serving:

  • Balsamic glaze (use sugar-free—you love blood sugar friendly!)
  • Extra basil
  • Side of arugula salad with lemon vinaigrette

Instructions

1. Assemble sandwiches:

  1. Layer on 2 bread slices: mozzarella → tomato → basil.
  2. Top with remaining bread.

2. Grill:

  1. Heat butter or oil in skillet over medium-low heat.
  2. Add sandwiches; cook 3–4 minutes per side, pressing gently, until golden and cheese is melted.
  3. Optional: Sprinkle outer bread with garlic powder before flipping.

3. Serve:

Slice in half. Drizzle with sugar-free balsamic glaze. Serve with extra basil and optional side salad.
💡 Pro Tips for Perfection:
Use day-old bread—less likely to get soggy.
Pat tomato slices dry—prevents excess moisture.
Low-sodium mastery (you love this!):
→ Use reduced-sodium mozzarella + skip added salt
→ Boost umami with garlic powder and fresh basil
Blood sugar friendly (you love this!):
→ Sugar-free balsamic = zero glycemic impact
→ Net carbs: 22g/sandwich (with regular bread)
Low-carb/keto option (you love this!):
→ Swap bread for low-carb tortillas or portobello “buns”
→ Use almond flour bread (net carbs drop to 6g/sandwich)
Make ahead:
→ Best served fresh—reheat in skillet to restore crispness

Storage & Serving Ideas

Best served fresh | Reheat: 3 min in skillet
Serving ideas:
→ As a light lunch with soup or salad
