Ingredients

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 cups cooked chicken breast, shredded
  • 1 cup low-fat cheddar cheese, shredded
  • ½ cup plain Greek yogurt
  • ¼ cup low-sodium chicken broth
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Lightly steam the broccoli and cauliflower until just tender.
  3. In a large bowl, combine Greek yogurt, chicken broth, garlic powder, onion powder, paprika, salt, and pepper.
  4. Add the chicken, broccoli, cauliflower, and half of the cheese. Stir well.
  5. Transfer the mixture to a lightly greased casserole dish.
  6. Sprinkle the remaining cheese evenly over the top.
  7. Bake for 20–25 minutes, or until hot and bubbly.
  8. Garnish with fresh parsley before serving if desired.
