- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 cups cooked chicken breast, shredded
- 1 cup low-fat cheddar cheese, shredded
- ½ cup plain Greek yogurt
- ¼ cup low-sodium chicken broth
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
- Salt and black pepper, to taste
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Lightly steam the broccoli and cauliflower until just tender.
- In a large bowl, combine Greek yogurt, chicken broth, garlic powder, onion powder, paprika, salt, and pepper.
- Add the chicken, broccoli, cauliflower, and half of the cheese. Stir well.
- Transfer the mixture to a lightly greased casserole dish.
- Sprinkle the remaining cheese evenly over the top.
- Bake for 20–25 minutes, or until hot and bubbly.
- Garnish with fresh parsley before serving if desired.
