Healthy Crack Potato Soup: Creamy, Comforting, and Lightened-Up Comfort Food

Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 1 cup milk (or unsweetened almond milk)
  • ½ cup plain Greek yogurt
  • ½ cup shredded light cheddar cheese
  • ½ tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • 2 tbsp chopped green onions

 

  • 2 tbsp turkey bacon bits (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion and garlic until fragrant and softened.
  3. Add potatoes and chicken broth. Bring to a boil.
  4. Reduce heat and simmer for 15–20 minutes until potatoes are tender.
  5. Lightly mash some potatoes for a creamy texture.
  6. Stir in milk, Greek yogurt, cheese, paprika, salt, and pepper.
  7. Cook for 5 more minutes, stirring gently until creamy.
  8. Top with green onions and turkey bacon if using.
  9. Serve warm.
