- 4 medium potatoes, peeled and diced
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 3 cups low-sodium chicken broth
- 1 cup milk (or unsweetened almond milk)
- ½ cup plain Greek yogurt
- ½ cup shredded light cheddar cheese
- ½ tsp smoked paprika
- ½ tsp black pepper
- ½ tsp salt (adjust to taste)
- 2 tbsp chopped green onions
- 2 tbsp turkey bacon bits (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion and garlic until fragrant and softened.
- Add potatoes and chicken broth. Bring to a boil.
- Reduce heat and simmer for 15–20 minutes until potatoes are tender.
- Lightly mash some potatoes for a creamy texture.
- Stir in milk, Greek yogurt, cheese, paprika, salt, and pepper.
- Cook for 5 more minutes, stirring gently until creamy.
- Top with green onions and turkey bacon if using.
- Serve warm.
