Ingredients

- 2 cups all-purpose flour
- 2 large eggs
- 1/2 tsp salt
- 1/4 cup water (add gradually as needed)

- 1 tbsp olive oil (optional, for softer dough)
Instructions
- In a large bowl, mix flour and salt.
- Make a well in the center and add eggs and olive oil.
- Gradually mix flour into the eggs, adding water a little at a time until a soft dough forms.
- Knead dough on a floured surface for 8β10 minutes until smooth and elastic.
- Cover and let rest for 20β30 minutes.
- Roll dough out thinly on a floured surface.
- Cut into strips for noodles.
- Let noodles dry for 15β30 minutes before cooking.
- Boil in salted water for 2β4 minutes until tender.
- Drain and serve with butter, in soups, or your favorite sauce.
