Ingredients

• 2 boneless, skinless chicken thighs (or breasts)
• 3 tbsp sugar-free BBQ sauce
• 1 tbsp pure honey
• 1 tsp apple cider vinegar
• 8 oz baby potatoes, halved
• 2 cloves garlic, minced
• 1 tbsp olive oil
• 2 tbsp grated parmesan (or nutritional yeast)
• 1 tsp fresh rosemary or thyme, chopped
• Salt, pepper, and paprika to taste


Instructions

• Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
• Toss potatoes with olive oil, garlic, rosemary, salt, and pepper; spread on one side of the sheet.
• In a small bowl, mix BBQ sauce, honey, and vinegar; brush generously over chicken thighs.
• Place chicken on the other side of the sheet; roast 20-25 mins until chicken reaches 165°F and potatoes are golden.
• Sprinkle parmesan over potatoes in the last 3 mins of roasting for a savory, melty finish.
• Let rest 2 minutes, then serve warm with extra herbs or a side of steamed greens!
