Dry base:

Wet ingredients:

  • 2 large eggs, room temperature

Instructions

1. Prep:
If using onion, soak in cold water 5 minutes; drain and pat dry (removes harsh bite).
Preheat oven to 400°F (200°C) if baking, or heat oil to 350°F (175°C) if frying.
2. Mix batter:
In a large bowl, whisk almond flour, pork rinds, coconut flour, baking powder, garlic powder, onion powder, paprika, pepper, and salt.
In separate bowl, beat eggs, sour cream/yogurt, melted butter, and vinegar until smooth.
Pour wet into dry; mix until just combined. Fold in chosen mix-ins.
Batter will be thick and scoopable—not pourable.
3. Shape:
Use a 1-tbsp cookie scoop or spoon to form balls. Roll gently between palms.
