Main components:

  • lbs bone-in, skin-on chicken thighs (you love rich flavor!)

  • lbs baby potatoes, halved (or swap for radishes—you love low-carb!)
  • 1 tbsp olive oil

Aromatics & broth:

  • 1 onion, quartered
  • 4 garlic cloves, smashed
  • 1 cup low-sodium chicken broth (you love low-sodium!)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt & black pepper to taste (use reduced-sodium—you love low-sodium!)

Finish:

  • 2 tbsp butter or ghee (you love buttery richness!)
  • Fresh parsley
  • Optional: Lemon zest (you love citrus brightness!)

Instructions

1. Sear chicken (optional but recommended):

Press Sauté on Instant Pot. Heat olive oil. Pat chicken dry; season with salt and pepper. Sear skin-side down 4–5 minutes until golden. Remove.

2. Deglaze & layer:

Add onion and garlic; sauté 2 minutes. Pour in broth, scraping bottom to release browned bits.
Place potatoes in liquid. Nestle chicken on top (skin up). Sprinkle with thyme and rosemary.

3. Pressure cook:

Seal lid. Set to High Pressure:
  • Bone-in thighs: 10 minutes
  • Boneless thighs/breasts: 6 minutes
    Natural release 10 minutes, then quick release remaining pressure.

4. Finish:

Remove chicken and potatoes. Stir butter into pot juices. Spoon sauce over top. Garnish with parsley and optional lemon zest.
