Irresistible Garlic Parmesan Chicken Lasagna Roll-Ups: Creamy, Cheesy Comfort in Every Bite

  • 9 lasagna noodles
  • 2 cups cooked chicken breast, shredded
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup ricotta cheese (light if preferred)
  • ½ cup plain Greek yogurt
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 cups low-sodium marinara or garlic cream sauce
  • 1 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cook lasagna noodles according to package directions, then drain and lay flat.
  3. Heat olive oil in a pan and sauté garlic for 30 seconds until fragrant.
  4. In a bowl, mix chicken, ricotta, Greek yogurt, half of the mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper.
  5. Spread a thin layer of filling over each noodle and roll tightly.
  6. Pour a small amount of sauce into the bottom of the baking dish.
  7. Place roll-ups seam-side down and top with remaining sauce.
  8. Sprinkle with remaining mozzarella cheese.
  9. Cover with foil and bake for 20 minutes, then uncover and bake 10–15 minutes until bubbly and golden.
  10. Garnish with fresh parsley and serve warm.
