- 9 lasagna noodles
- 2 cups cooked chicken breast, shredded
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup ricotta cheese (light if preferred)
- ½ cup plain Greek yogurt
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp black pepper
- ½ tsp salt
- 2 cups low-sodium marinara or garlic cream sauce
- 1 tbsp chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Cook lasagna noodles according to package directions, then drain and lay flat.
- Heat olive oil in a pan and sauté garlic for 30 seconds until fragrant.
- In a bowl, mix chicken, ricotta, Greek yogurt, half of the mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper.
- Spread a thin layer of filling over each noodle and roll tightly.
- Pour a small amount of sauce into the bottom of the baking dish.
- Place roll-ups seam-side down and top with remaining sauce.
- Sprinkle with remaining mozzarella cheese.
- Cover with foil and bake for 20 minutes, then uncover and bake 10–15 minutes until bubbly and golden.
- Garnish with fresh parsley and serve warm.
