Ingredients

For the Biscuit Dough:

2 cups biscuit mix (or use 1 cup almond flour + ¼ cup coconut flour + ½ tsp baking powder + pinch of salt)
¼ cup melted butter or coconut oil
2–4 tbsp water or unsweetened almond milk (to bind)
1 large egg
For the Filling Options:

Cooked scrambled eggs
Crumbled cooked bacon or sausage
Sautéed spinach or mushrooms
Shredded cheddar or cream cheese
Optional: Hot sauce or sugar-free ranch for extra flavor


Instructions

Preheat oven to 350°F (175°C).
If using homemade dough, mix almond flour, coconut flour, baking powder, and salt. Add egg and melted butter, then gradually mix in water/milk to form a soft dough.
Roll out the dough between two sheets of parchment paper to about ½-inch thickness.
Cut into rounds using a biscuit cutter or glass.
Spoon your favorite filling into the center of each round — try bacon & egg or sausage & cheese for classic flavor.
Fold over and seal the edges to form a stuffed biscuit.
Place on a lined baking sheet and bake for 15–18 minutes until golden and flaky.
Let cool slightly before serving warm and delicious!
