- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1/2 cup water
- 6 small flour tortillas
- 1 cup salsa
- 1 cup black beans, drained (optional)
- 1 cup corn (optional)
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 tsp cumin
- 1/2 tsp paprika

Instructions
- Preheat oven to 375ยฐF (190ยฐC) and grease a baking dish.
- In a skillet, cook ground beef and onion until browned.
- Add garlic and cook for 1 minute.
- Stir in taco seasoning, water, cumin, and paprika; simmer until thickened.
- Mix in beans and corn if using.
- Layer tortillas in the baking dish, followed by beef mixture, salsa, and cheese.
- Repeat layers until ingredients are used, finishing with cheese on top.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake another 10 minutes until bubbly and golden.
- Let rest 5 minutes before slicing and serving.
