Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1/2 cup water
  • 6 small flour tortillas
  • 1 cup salsa
  • 1 cup black beans, drained (optional)
  • 1 cup corn (optional)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 tsp cumin
  • 1/2 tsp paprika

  • Cooking spray or oil

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and grease a baking dish.
  2. In a skillet, cook ground beef and onion until browned.
  3. Add garlic and cook for 1 minute.
  4. Stir in taco seasoning, water, cumin, and paprika; simmer until thickened.
  5. Mix in beans and corn if using.
  6. Layer tortillas in the baking dish, followed by beef mixture, salsa, and cheese.
  7. Repeat layers until ingredients are used, finishing with cheese on top.
  8. Cover with foil and bake for 20 minutes.
  9. Remove foil and bake another 10 minutes until bubbly and golden.
  10. Let rest 5 minutes before slicing and serving.
