- 🧀 2 cups shredded Mexican cheese blend
- 🫓 6 small flour tortillas
- 🥣 1 cup salsa
- 🌿 Chopped cilantro (optional)
- 🥄 Sour cream, for serving (optional)
Instructions
- 🔥 Preheat oven to 375°F (190°C).
- 🍳 Cook ground beef and onion until browned. Drain excess fat.
- 🌮 Stir in taco seasoning, water, tomatoes, corn, and black beans. Simmer for 5 minutes.
- 🫓 In a greased baking dish, layer tortillas, meat mixture, salsa, and cheese. Repeat layers.
- 🧀 Finish with a generous layer of cheese on top.
- 🔥 Bake for 20–25 minutes, until bubbly and golden.
- 🌿 Garnish with cilantro and serve with sour cream if desired.
