Ingredients

  • ๐ŸŽƒ 2 acorn squash, halved and seeds removed
  • ๐Ÿ 3 tbsp maple syrup
  • ๐Ÿซ’ 2 tbsp olive oil
  • ๐Ÿงˆ 2 tbsp butter, melted
  • ๐Ÿง‚ Salt & black pepper, to taste
  • ๐ŸŒฟ 1 tsp fresh thyme (or ยฝ tsp dried thyme)
  • ๐Ÿง€ ยฝ cup crumbled blue cheese
  • ๐ŸŒฐ ยฝ cup chopped pecans

  • ๐ŸŒฑ Fresh parsley, for garnish

Instructions

  1. ๐Ÿ”ฅ Preheat oven to 400ยฐF (200ยฐC) and line a baking sheet.
  2. ๐ŸŽƒ Brush squash halves with olive oil and melted butter. Season with salt, pepper, and thyme.
  3. ๐Ÿ Drizzle maple syrup over the squash.
  4. ๐Ÿ”ฅ Roast cut-side up for 35โ€“45 minutes until tender.
  5. ๐Ÿง€ Sprinkle with blue cheese and pecans during the last 5 minutes of baking.
  6. ๐ŸŒฑ Garnish with parsley and serve warm.
