Ingredients
- ๐ 2 acorn squash, halved and seeds removed
- ๐ 3 tbsp maple syrup
- ๐ซ 2 tbsp olive oil
- ๐ง 2 tbsp butter, melted
- ๐ง Salt & black pepper, to taste
- ๐ฟ 1 tsp fresh thyme (or ยฝ tsp dried thyme)
- ๐ง ยฝ cup crumbled blue cheese
- ๐ฐ ยฝ cup chopped pecans

Instructions
- ๐ฅ Preheat oven to 400ยฐF (200ยฐC) and line a baking sheet.
- ๐ Brush squash halves with olive oil and melted butter. Season with salt, pepper, and thyme.
- ๐ Drizzle maple syrup over the squash.
- ๐ฅ Roast cut-side up for 35โ45 minutes until tender.
- ๐ง Sprinkle with blue cheese and pecans during the last 5 minutes of baking.
- ๐ฑ Garnish with parsley and serve warm.
