Orange Zucchini Bread: Moist, Bright, and Perfectly Wholesome

Ingredients

  • 1½ cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • 2 large eggs
  • 1 cup shredded zucchini (excess moisture squeezed out)
  • ⅓ cup maple syrup
  • ¼ cup coconut oil, melted
  • ¼ cup plain Greek yogurt
  • 1 tbsp orange zest
  • ¼ cup fresh orange juice
  • 1 tsp vanilla extract
  • ¼ cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan or line with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In another bowl, mix eggs, maple syrup, coconut oil, Greek yogurt, orange juice, zest, and vanilla.
  4. Stir wet ingredients into dry ingredients until just combined.
  5. Fold in shredded zucchini and walnuts if using.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 40–45 minutes, or until a toothpick comes out clean.
  8. Cool for 10 minutes in the pan before transferring to a wire rack.
  9. Slice and serve.
