Orange Zucchini Bread: Moist, Citrus-Kissed, and Perfectly Spiced

Ingredients

  • 1 1/2 cups grated zucchini (excess water squeezed out)
  • 2 large eggs
  • 1/3 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1/4 cup fresh orange juice
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 1 3/4 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon

 

  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk eggs, coconut oil, maple syrup, orange juice, zest, and vanilla.
  3. Stir in grated zucchini.
  4. In another bowl, mix flour, baking soda, baking powder, cinnamon, and salt.
  5. Combine wet and dry ingredients until just mixed.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 45–55 minutes, or until a toothpick comes out clean.
  8. Cool completely before slicing.
