- 1 1/2 cups grated zucchini (excess water squeezed out)
- 2 large eggs
- 1/3 cup coconut oil, melted
- 1/2 cup maple syrup
- 1/4 cup fresh orange juice
- 1 tbsp orange zest
- 1 tsp vanilla extract
- 1 3/4 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk eggs, coconut oil, maple syrup, orange juice, zest, and vanilla.
- Stir in grated zucchini.
- In another bowl, mix flour, baking soda, baking powder, cinnamon, and salt.
- Combine wet and dry ingredients until just mixed.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 45–55 minutes, or until a toothpick comes out clean.
- Cool completely before slicing.
