- 8 oz whole wheat egg noodles
- 1 lb lean ground beef or turkey
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 cups low-sodium marinara sauce
- 8 oz light cream cheese, softened
- ½ cup plain Greek yogurt
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp black pepper
- Salt, to taste
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook the noodles according to package directions until al dente. Drain and set aside.
- Heat a skillet over medium heat and cook the ground beef with onion until browned.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in marinara sauce, Italian seasoning, paprika, salt, and pepper. Simmer for 5 minutes.
- In a bowl, mix cream cheese and Greek yogurt until smooth.
- Combine the cooked noodles with the creamy cheese mixture.
- Spread the noodle mixture into the baking dish.
- Top with the meat sauce, mozzarella, and Parmesan cheese.
- Bake for 25–30 minutes until bubbly and golden.
- Garnish with fresh parsley before serving.
