- 2 large sweet potatoes, peeled and cubed
- 1 tbsp olive oil
- 2 tbsp pumpkin puree
- 1 tbsp maple syrup
- 1 tsp pumpkin pie spice
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp sea salt
- ¼ tsp black pepper
- 2 tbsp chopped pecans (optional)
- 1 tbsp chopped fresh parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the olive oil, pumpkin puree, maple syrup, pumpkin pie spice, cinnamon, nutmeg, salt, and black pepper.
- Add the cubed sweet potatoes and toss until evenly coated.
- Spread the sweet potatoes in a single layer on the prepared baking sheet.
- Roast for 30–35 minutes, stirring halfway through, until tender and lightly caramelized.
- Sprinkle with chopped pecans during the last 5 minutes of baking, if using.
- Garnish with fresh parsley and serve warm.
