Pumpkin Spiced Sweet Potatoes: A Cozy, Sweet, and Savory Fall Side Dish

  • 2 large sweet potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 2 tbsp pumpkin puree
  • 1 tbsp maple syrup
  • 1 tsp pumpkin pie spice
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • 2 tbsp chopped pecans (optional)
  • 1 tbsp chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the olive oil, pumpkin puree, maple syrup, pumpkin pie spice, cinnamon, nutmeg, salt, and black pepper.
  3. Add the cubed sweet potatoes and toss until evenly coated.
  4. Spread the sweet potatoes in a single layer on the prepared baking sheet.
  5. Roast for 30–35 minutes, stirring halfway through, until tender and lightly caramelized.
  6. Sprinkle with chopped pecans during the last 5 minutes of baking, if using.
  7. Garnish with fresh parsley and serve warm.
