- 3 large sweet potatoes, peeled and cubed
- 2 tbsp olive oil or coconut oil
- 1 tsp cinnamon (optional, for sweet version)
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt

Instructions
- Preheat oven to 425Β°F (220Β°C) and line a baking sheet with parchment paper.
- Cut sweet potatoes into evenly sized cubes.
- In a large bowl, toss sweet potatoes with oil, cinnamon, paprika, garlic powder, salt, and pepper.
- Spread in a single layer on the baking sheet.
- Roast for 25β30 minutes, flipping halfway through, until golden and crispy on edges.
- Drizzle with maple syrup during the last 5 minutes if using.
- Serve warm as a side dish or bowl base.
