Sausage Stuffed Butternut Squash: The Ultimate Comfort Food with a Healthy Twist

Ingredients

  • ๐ŸŽƒ 1 large butternut squash, halved and seeded
  • ๐ŸŒญ 1 lb Italian sausage
  • ๐Ÿง… 1 small onion, diced
  • ๐Ÿง„ 2 cloves garlic, minced
  • ๐ŸŒฟ 1 tsp Italian seasoning
  • ๐Ÿฅฌ 2 cups fresh spinach, chopped
  • ๐Ÿง€ 1 cup shredded mozzarella or Parmesan cheese
  • ๐Ÿซ’ 2 tbsp olive oil
  • ๐Ÿง‚ Salt & black pepper, to taste

Instructions

  1. ๐Ÿ”ฅ Preheat oven to 400ยฐF (200ยฐC). Brush the squash with olive oil, season with salt and pepper, and roast cut-side down for 35โ€“40 minutes.
  2. ๐Ÿณ Cook the sausage in a skillet with the onion and garlic until browned.
  3. ๐Ÿฅฌ Stir in the spinach and Italian seasoning, cooking until the spinach wilts.
  4. ๐Ÿฅ„ Scoop out a little of the roasted squash and mix it into the sausage filling.
  5. ๐Ÿง€ Fill each squash half with the sausage mixture and top with cheese.
  6. ๐Ÿ”ฅ Bake for 10โ€“15 minutes until the cheese is melted and bubbly.
  7. ๐ŸŒฑ Garnish with fresh parsley and serve warm.
