Ingredients
- ๐ 1 large butternut squash, halved and seeded
- ๐ญ 1 lb Italian sausage
- ๐ง 1 small onion, diced
- ๐ง 2 cloves garlic, minced
- ๐ฟ 1 tsp Italian seasoning
- ๐ฅฌ 2 cups fresh spinach, chopped
- ๐ง 1 cup shredded mozzarella or Parmesan cheese
- ๐ซ 2 tbsp olive oil
- ๐ง Salt & black pepper, to taste

Instructions
- ๐ฅ Preheat oven to 400ยฐF (200ยฐC). Brush the squash with olive oil, season with salt and pepper, and roast cut-side down for 35โ40 minutes.
- ๐ณ Cook the sausage in a skillet with the onion and garlic until browned.
- ๐ฅฌ Stir in the spinach and Italian seasoning, cooking until the spinach wilts.
- ๐ฅ Scoop out a little of the roasted squash and mix it into the sausage filling.
- ๐ง Fill each squash half with the sausage mixture and top with cheese.
- ๐ฅ Bake for 10โ15 minutes until the cheese is melted and bubbly.
- ๐ฑ Garnish with fresh parsley and serve warm.
