- 1 medium head green cabbage, chopped (about 6 cups)
- 1 tbsp olive oil
- 1 small onion, sliced
- 1 carrot, shredded
- 1 bell pepper, diced
- 2 cloves garlic, minced
- ½ tsp paprika
- ½ tsp black pepper
- ½ tsp sea salt
- 1 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion, carrot, and bell pepper. Cook for 3–4 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add the chopped cabbage and season with paprika, salt, and pepper.
- Cook for 10–12 minutes, stirring occasionally, until the cabbage is tender and lightly golden.
- Remove from heat and sprinkle with fresh parsley.
- Serve warm as a healthy side dish or light meal.
