For the Mashed Potatoes:
- 2 lbs potatoes, peeled and cubed
- 1/4 cup butter
- 1/2 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Chicken Gravy:
- 3 cups cooked chicken, shredded
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups chicken broth
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Place potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15–20 minutes.
- Drain potatoes and mash with butter, milk, salt, and pepper until smooth. Set aside.
- In a skillet, melt butter over medium heat.
- Whisk in flour and cook for 1 minute.
- Gradually add chicken broth, whisking constantly until smooth.
- Stir in garlic powder, onion powder, thyme, salt, and pepper.
- Simmer for 3–5 minutes until gravy thickens.
- Add shredded chicken and cook until heated through.
- Spoon mashed potatoes onto plates or bowls.
- Top generously with chicken gravy and serve warm.
