Shredded Chicken Gravy on Mashed Potatoes: The Ultimate Comfort Food Dinner

For the Mashed Potatoes:

  • 2 lbs potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Chicken Gravy:

 

  • 3 cups cooked chicken, shredded
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Place potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15–20 minutes.
  2. Drain potatoes and mash with butter, milk, salt, and pepper until smooth. Set aside.
  3. In a skillet, melt butter over medium heat.
  4. Whisk in flour and cook for 1 minute.
  5. Gradually add chicken broth, whisking constantly until smooth.
  6. Stir in garlic powder, onion powder, thyme, salt, and pepper.
  7. Simmer for 3–5 minutes until gravy thickens.
  8. Add shredded chicken and cook until heated through.
  9. Spoon mashed potatoes onto plates or bowls.
  10. Top generously with chicken gravy and serve warm.
