Sour Cream Noodle Bake: A Creamy, Cheesy Comfort Food Classic

  • 8 oz whole wheat egg noodles
  • 1 lb lean ground beef or ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups low-sodium marinara sauce
  • 1 cup plain Greek yogurt
  • 4 oz light cream cheese, softened
  • 1 cup low-fat cottage cheese
  • 1 cup shredded reduced-fat cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the egg noodles according to the package directions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, cook the ground beef and onion until the meat is browned. Drain any excess fat.
  4. Add the garlic, Italian seasoning, paprika, salt, pepper, and marinara sauce. Simmer for 5 minutes.
  5. In a bowl, combine the Greek yogurt, cream cheese, and cottage cheese until smooth.
  6. Fold the cooked noodles into the creamy cheese mixture.
  7. Spread half of the noodle mixture into the prepared baking dish.
  8. Top with the meat sauce, then repeat with the remaining noodle mixture.
  9. Sprinkle the cheddar and Parmesan cheese evenly over the top.
  10. Bake for 25–30 minutes, or until hot and bubbly with a lightly golden top.
  11. Garnish with fresh parsley before serving.
