- 8 oz whole wheat egg noodles
- 1 lb lean ground beef or ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups low-sodium marinara sauce
- 1 cup plain Greek yogurt
- 4 oz light cream cheese, softened
- 1 cup low-fat cottage cheese
- 1 cup shredded reduced-fat cheddar cheese
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp sea salt
- ¼ tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Cook the egg noodles according to the package directions until al dente. Drain and set aside.
- In a large skillet over medium heat, cook the ground beef and onion until the meat is browned. Drain any excess fat.
- Add the garlic, Italian seasoning, paprika, salt, pepper, and marinara sauce. Simmer for 5 minutes.
- In a bowl, combine the Greek yogurt, cream cheese, and cottage cheese until smooth.
- Fold the cooked noodles into the creamy cheese mixture.
- Spread half of the noodle mixture into the prepared baking dish.
- Top with the meat sauce, then repeat with the remaining noodle mixture.
- Sprinkle the cheddar and Parmesan cheese evenly over the top.
- Bake for 25–30 minutes, or until hot and bubbly with a lightly golden top.
- Garnish with fresh parsley before serving.
